Sheet-Pan Harissa Salmon with Crispy Chickpeas

Sheet-pan dinners win on math: one pan, one oven, almost no cleanup. Here the chickpeas get a head start so they crisp up while the salmon roasts to tender, and a smoky harissa glaze ties it all together. A spoonful of herbed yogurt at the end keeps the heat friendly.

Instructions

  1. Heat the oven to 425°F (220°C). Toss the dried chickpeas with 3 tbsp olive oil, the cumin, and a good pinch of salt and pepper. Spread them on a sheet pan in a single layer and roast 15 minutes, shaking once. Drying the chickpeas well is the difference between crispy and soggy.
  2. Mix the glaze. Stir together the harissa, honey, olive oil, garlic, and lemon juice. Pat the salmon dry and season lightly with salt.
  3. Add the salmon. Pull the pan out, push the chickpeas to the edges, and nestle the salmon fillets in the center. Brush each generously with the harissa glaze.
  4. Roast together. Return to the oven for 10–12 minutes, until the salmon flakes easily and reaches 125–130°F at the thickest part for medium. The chickpeas finish crisping in the same window.
  5. Make the yogurt and serve. Stir the yogurt with herbs, lemon, and salt. Serve the salmon and chickpeas with a swoosh of herbed yogurt and an extra squeeze of lemon. Great over warm couscous or with flatbread.

Don't overcook the fish

Salmon keeps cooking after it leaves the oven. Pull it a touch early — when the center is just barely opaque — and let it rest two minutes. An instant-read thermometer takes the guesswork out entirely.

Everything roasts on one pan in under half an hour, the glaze is a 5-second stir, and the components reheat or repurpose easily — leftover crispy chickpeas are excellent on salads. It's proof that "fast" and "genuinely good" aren't opposites.
